
Lime Simple Syrup
This lime simple syrup is fresh, tangy, and works well in cocktails, margaritas, and cakes. Made with simple ingredients, it’s easy to make at home and adds a fresh, zesty twist to drinks and desserts.

Lime simple syrup ratio
For this lime simple syrup, I stick with a simple 1 cup sugar to 1 cup water ratio. It gives a clean sweetness that doesn’t overpower the lime.
If I’m making it for margaritas or stronger cocktails, I’ll sometimes add an extra spoonful or two of sugar so it has a little more body and holds up well.
When I want something lighter like for brushing over cakes or stirring into lemonade, I’ll slightly reduce the sugar so the citrus comes through more. After testing it a few times, I’ve found the 1:1 ratio is the most reliable formula, and you can easily adjust from there depending on how you plan to use it.
Ingredients
- White granulated sugar
- Water (filtered or plain water)
- Lime zest and lime juice
Use unwaxed limes if possible when zesting, as they provide a cleaner, more natural citrus flavor without any wax coating.

How to make lime simple syrup
First, combine the sugar and water in a small saucepan and warm it gently over medium heat, stirring until the sugar has fully dissolved.
Next, add the lime zest and let the mixture simmer softly for 3–5 minutes, allowing the flavors to infuse.
Then, remove the saucepan from the heat and let the syrup rest for about 10 minutes so the lime aroma can deepen.
After that, strain out the zest and gently stir in the fresh lime juice.
Finally, allow the syrup to cool completely before transferring it to a clean, sterilized glass bottle.

Storage & shelf life
Refrigerate the syrup in a sterilized glass bottle or jar, keeping it tightly sealed to preserve freshness. For the best flavor and quality, use it within two weeks, and discard it if you notice any cloudiness, off smells, or mold.
You can also freeze the syrup to extend its shelf life. Pour it into ice cube trays for easy portions, freeze until solid, then transfer the cubes to a freezer-safe container.
Frozen lime simple syrup will keep well for up to 3 months; thaw cubes in the refrigerator or at room temperature before using.
Variations
- Lime simple syrup with mint: add a few bruised mint leaves during steeping for a garden-fresh finish.
- Lime and ginger: simmer with thin slices of fresh ginger for warmth and depth.
- More zest: increase zest slightly (but keep juice the same) for more aroma.
- Less tart: reduce lime juice to 2 tablespoons if you prefer a softer citrus edge.

Instructions
- In a small saucepan, combine the water and sugar over medium heat. Stir until the sugar has fully dissolved.
- Add the lime zest and lime peel. Reduce heat and gently simmer for 5–7 minutes, allowing the citrus oils to infuse the syrup.
- Remove from heat and stir in the fresh lime juice.
- Strain out the zest and peel.
- Let the syrup cool completely, then transfer to an airtight container and refrigerate.
