This homemade lime simple syrup is fresh, bright, and perfectly balanced. Made with real lime zest, peel, and juice, it’s one of those small recipes I always keep in my fridge to instantly elevate drinks and desserts.
Microplane
Juicer or blender
Strainer
- 1 cup water
- 1 cup sugar
- Zest of 2 limes
- Peel of 1 lime wide strips, pith avoided
- ½ cup fresh lime juice
In a small saucepan, combine the water and sugar over medium heat. Stir until the sugar has fully dissolved.
Add the lime zest and lime peel. Reduce heat and gently simmer for 5–7 minutes, allowing the citrus oils to infuse the syrup.
Remove from heat and stir in the fresh lime juice.
Strain out the zest and peel.
Let the syrup cool completely, then transfer to an airtight container and refrigerate.
Zest the limes before juicing for easier prep.
Avoid boiling the syrup to prevent bitterness.
Fresh lime juice gives the best flavor. Bottled juice won’t compare.
Store in an airtight container in the refrigerator for up to 2–3 weeks. Freeze in ice cube trays for longer storage.
