This rosemary simple syrup is lightly sweet and beautifully aromatic, with a gentle herbal character that never feels too savory. It blends effortlessly into hot or cold drinks, adding subtle depth without overpowering. Made using just 3 ingredients!
- 1 cup (200 g) white granulated sugar
- 1 cup (240 ml) filtered water
- 1 - 2 small sprigs fresh rosemary
Add sugar and water to a small saucepan over medium heat.
Stir gently until the sugar is fully dissolved.
Remove from heat and add the rosemary sprigs.
Cover and let steep for 15–20 minutes (taste at 10 minutes if you prefer a lighter flavor).
Strain out the rosemary.
Allow the syrup to cool completely, then transfer to a sterilized glass bottle or jar.
For a richer syrup, use a 2:1 ratio (2 cups sugar to 1 cup water).
If the flavor becomes too strong, shorten the steeping time next batch.
For a citrus-rosemary version, add a few strips of lemon or orange zest during steeping.
Storage:Store refrigerated in a sterilized glass bottle or jar. Best used within 2 weeks.
