A clean, refreshing cucumber simple syrup for cocktails made with fresh cucumber juice and sugar. Also perfect for lemonades, mocktails, and refreshing drinks.
- 2 large English cucumbers 1 cup of cucumber juice
- 1 cup granulated sugar
- ½ teaspoon fresh lemon juice optional
Blend chopped cucumbers until fully liquefied.
Strain through fine mesh or cheesecloth. Measure 1 cup juice.
Combine juice and sugar in saucepan over low heat.
Stir gently until sugar dissolves completely. Do not boil.
Remove from heat, stir in lemon juice (if using).
Cool completely before bottling. Refrigerate.
Do not overheat; high heat dulls the fresh cucumber flavor.
Strain thoroughly for cocktail clarity.
For thicker cucumber syrup, increase sugar slightly (1:1.25 ratio).
Freeze in cubes for long-term storage.
