A clean, refreshing cucumber simple syrup for cocktails made with fresh cucumber juice and sugar. Also perfect for lemonades, mocktails, and refreshing drinks.

Equipment

  • Blender
  • Small saucepan
  • Fine-mesh strainer or sieve
  • Glass bottle or jar

Ingredients

  • 2 large English cucumbers 1 cup of cucumber juice
  • 1 cup granulated sugar
  • ½ teaspoon fresh lemon juice optional

Instructions

  • Blend chopped cucumbers until fully liquefied.
  • Strain through fine mesh or cheesecloth. Measure 1 cup juice.
  • Combine juice and sugar in saucepan over low heat.
  • Stir gently until sugar dissolves completely. Do not boil.
  • Remove from heat, stir in lemon juice (if using).
  • Cool completely before bottling. Refrigerate.

Notes

Do not overheat; high heat dulls the fresh cucumber flavor.
Strain thoroughly for cocktail clarity.
For thicker cucumber syrup, increase sugar slightly (1:1.25 ratio).
Freeze in cubes for long-term storage.
