This clove simple syrup is cozy, aromatic, and lightly spiced, making it perfect for adding a soft, warming note to coffee, tea, sparkling drinks, and a variety of desserts.
Small saucepan
Fine-mesh strainer

Sterilized bottle or jar
- 1 cup (200 g) white granulated sugar (add a teaspoon of brown sugar for color)
- 1 cup (240 ml) filtered water
- 10 –12 whole cloves
Combine sugar and water in a small saucepan over medium heat.
Stir until the sugar dissolves.
Add cloves and simmer gently for 5–8 minutes.
Remove from heat and let steep for 10 minutes.
Strain out the cloves.
Allow the syrup to cool completely, then transfer to a sterilized glass bottle or jar.
Use a 2:1 sugar-to-water ratio for a richer syrup.
Combine with cinnamon, star anise, or cardamom for a warming spice blend.
Reduce simmering and steeping time for a lighter syrup.
Store refrigerated in a sterilized glass bottle or jar. Best used within 2 weeks.
