Make cinnamon simple syrup at home with just 3 ingredients. Ready in 15 minutes and perfect for coffee, cocktails, and more.
- 1 cup granulated sugar
- 1 cup water
- 2 cinnamon sticks
Combine sugar and water in a small saucepan over medium heat.
Stir until the sugar is fully dissolved, about 2 to 3 minutes.
Add the cinnamon sticks and reduce heat to low.
Simmer gently for 10 minutes, stirring occasionally. Taste at the 5-minute mark and pull earlier for a lighter flavor.
Remove from heat and let cool for 5 minutes.
Strain through a fine mesh strainer into a clean jar or bottle.
Store in the refrigerator for up to 3 weeks.
For a 2:1 rich version, use 2 cups sugar to 1 cup water.
Ceylon cinnamon gives a softer, more floral flavor than Cassia.
Remove cinnamon sticks before storing to prevent the flavor from intensifying too much over time.
Freeze in an ice cube tray for up to 3 months.
