This brown sugar vanilla simple syrup is made with just a few pantry staples and comes together in minutes. Perfect for coffee, tea, boba, cocktails, and dessert, this syrup is an easy upgrade from classic simple syrup and stores well in the fridge for everyday use.

- 1 cup brown sugar light or dark
- 1 cup water
- 2 teaspoons vanilla extract or 1 teaspoon vanilla bean paste
- Pinch of salt optional
Add brown sugar and water to a saucepan over medium heat.
Stir gently until the sugar fully dissolves and the mixture is smooth.
Remove from heat and stir in vanilla and salt, if using.
Cool slightly, then transfer to a sealed container and refrigerate.
For a thicker syrup, simmer for 2–3 extra minutes.
Add a touch of molasses if you want a stronger caramel note.
Works well in coffee, cold brew, lattes, tea, and matcha.
For a thicker syrup, use 1½ or 2 cups brown sugar with 1 cup water. Shake before each use.
Yield: 1 cup (240 ml)
