A deep, richly colored homemade blackberry simple syrup made with fresh or frozen blackberries and white sugar. Ready in under 10 minutes. Works in iced lattes, cocktails, sparkling drinks, and desserts.
- 1 cup fresh or frozen blackberries
- 1 cup white sugar
- 1 cup water filtered
- 1 tsp lemon juice optional
Combine blackberries, sugar, and water in a small saucepan over medium heat. Stir gently as the mixture warms and the berries begin to break down.
Bring to a gentle simmer and cook for 5 minutes until the blackberries are completely soft and the liquid is deeply colored and glossy. Do not boil hard.
Remove from heat and rest for 5 minutes. Strain through a fine mesh sieve into a clean jar, pressing the solids firmly to extract all the juice.
Stir in lemon juice if using. Leave uncovered until fully cool before sealing and refrigerating.
Use a fine mesh sieve: blackberry seeds are small and will get through a coarse strainer.
Do not boil hard: gentle simmer only to preserve the fresh berry aroma.
The syrup looks thin when hot so do not reduce further, it thickens as it cools.
Seal only once fully cool to avoid trapped steam watering down the syrup.
Day two tastes better than day one as the flavor deepens overnight in the fridge.
