This apricot simple syrup is a sweet, fruity syrup made with ripe apricots, sugar, and water. It's perfect for lattes, iced coffee, tea, lemonade, cocktails, mocktails, sparkling water, and desserts.

Equipment

  • Fine-mesh strainer or sieve
  • Glass bottle or jar for storing

Ingredients

  • 2 cups ripe apricots pitted and chopped
  • 1 cup granulated sugar
  • 1 cup water
  • 1 teaspoon lemon juice

Instructions

  • Add the apricots, sugar, and water to a small saucepan.
  • Bring to a gentle simmer over medium heat.
  • Cook for 10 minutes, stirring occasionally and lightly mashing the apricots as they soften.
  • Remove from heat and strain immediately.
  • Stir in the lemon juice and allow the syrup to cool completely.
  • Transfer to a clean bottle or jar and refrigerate.

Notes

Use fully ripe apricots for the sweetest, most aromatic flavor.
For a deeper stone-fruit profile, add ⅛ teaspoon almond extract after straining.
Reduce the water to ¾ cup for a more concentrated syrup.
This syrup pairs beautifully with vanilla, honey, almond, lavender, and white chocolate.
Use 1–2 tablespoons in coffee, tea, cocktails, sparkling water, or desserts.
