This apricot simple syrup is a sweet, fruity syrup made with ripe apricots, sugar, and water. It's perfect for lattes, iced coffee, tea, lemonade, cocktails, mocktails, sparkling water, and desserts.
- 2 cups ripe apricots pitted and chopped
- 1 cup granulated sugar
- 1 cup water
- 1 teaspoon lemon juice
Add the apricots, sugar, and water to a small saucepan.
Bring to a gentle simmer over medium heat.
Cook for 10 minutes, stirring occasionally and lightly mashing the apricots as they soften.
Remove from heat and strain immediately.
Stir in the lemon juice and allow the syrup to cool completely.
Transfer to a clean bottle or jar and refrigerate.
Use fully ripe apricots for the sweetest, most aromatic flavor.
For a deeper stone-fruit profile, add ⅛ teaspoon almond extract after straining.
Reduce the water to ¾ cup for a more concentrated syrup.
