Homemade apple cinnamon simple syrup recipe using fresh apples and cinnamon sticks. Great for coffee, pancakes, oatmeal, and drinks.
- 2 medium apples peeled, cored, and chopped (sweet varieties)
- 1 cup (200 g) brown sugar
- 1 cup water
- 2 cinnamon sticks
- Optional: 1 tsp lemon juice to brighten
Add apples, sugar, water, and cinnamon sticks to a small saucepan. Stir to combine.
Bring to a gentle simmer over medium heat until apples soften (about 8–10 minutes).
Lightly mash the apples to release juices.
Continue simmering 12–15 minutes, until slightly thickened.
Stir in lemon juice, if using.
Strain through a fine mesh sieve, pressing apples to extract syrup. Discard solids.
Let cool and transfer to a jar or bottle. Store in the refrigerator.
Use sweet, aromatic apples for natural sweetness.
Simmer gently to preserve flavor.
Mash lightly to extract juice without clouding syrup.
Cinnamon sticks give a clean, smooth spice.
Refrigerate in a sealed jar or bottle for up to 2 weeks.
